It's an easy coconut curry with a tomato twist. My husband absolutely LOVED this dish! He couldn't believe it was made from scratch! School's out! Break out the bbq's and swimming suits! Summer here we come. I'm not even going to school but summer break still gets me excited. (Probably because I was a school teacher for 7 years...) There's nothing like the sun and some fun to make everything feel better. I don't know about your family but we love a good bbq.
